Nutty Apple and Raisin Salad
 

Apples and raisins and nuts, oh my! For a sweet and crunchy snack any time of the day, this nutty concoction is sure to please. If you don’t like nuts or raisins, try experimenting with other ingredients like dried apricots or cherries, sliced bananas, or even chocolate chips!  For a real show-stopper, you could top the whole thing off with sweet and tangy vanilla yogurt.  Make sure to ask an adult for help with chopping the apple.

You will need:

1 medium sized apple, cut into bite sized pieces
1 handful of raisins
1 handful of pecans
1 teaspoon of honey
1 lemon
1 pinch of ground cinnamon (optional)

  1. Before you cut your lemon in half, try rolling the lemon around on the counter for about 15 seconds to really get the juices flowing.  Then cut the lemon in half and squeeze out the juice into a medium sized bowl. If any seeds fall into the bowl, make sure to pick them out.
  2. Measure out 1 teaspoon of honey, add to the lemon juice, and stir them together.
  3. Now add the apples, raisins, and pecans, and carefully stir the whole mixture together using a large spoon or spatula.
  4. Once the mixture is coated, transfer to a bowl or plate and for a little extra zing, sprinkle over a pinch of ground cinnamon. 
  5. Eat up!
